Zucchini Parmesan

A delicious and easy recipe for Zucchini Parmesan, a classic Italian-American dish.

  • 3 medium zucchini thinly sliced
  • 0.5 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 tablespoon olive oil for frying
  • 1 cup marinara sauce optional, for serving

Preparation Steps

  • Preheat your oven to 400°F (200°C). Grease a baking dish.
  • Slice zucchini into 0.25-inch thick rounds.

  • Set up three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with Parmesan cheese, salt, and pepper.

  • Dip each zucchini slice first into the flour, then into the egg, and finally coat with the breadcrumb mixture.

  • Heat olive oil in a large skillet over medium-high heat. Fry zucchini slices for 2-3 minutes per side until golden brown. You may need to do this in batches.

  • Arrange the fried zucchini slices in a single layer in the prepared baking dish. If desired, spoon marinara sauce over the top.

Notes
