zucchini orange muffins

Delicious and moist zucchini orange muffins that are perfect for breakfast or a snack.

  • 1.5 cups zucchini, grated about 1 medium zucchini
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 teaspoons orange zest from 1 orange
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 0.25 cup orange juice freshly squeezed
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease a 12-cup muffin pan or line with paper liners.
  • In a large bowl, beat the eggs. Mix in the grated zucchini, sugar, oil, orange juice, orange zest, and vanilla extract.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Spoon the batter into the prepared muffin cups, filling them about 3/4 full.
  • Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

These muffins can be stored in an airtight container for up to 3 days.
