  • 2 cups shredded zucchini drain excess moisture
  • 1 cup breadcrumbs whole wheat
  • 1 large egg
  • 0.5 cup parmesan cheese grated
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • In a large bowl, combine shredded zucchini, breadcrumbs, egg, parmesan, garlic powder, salt, and black pepper. Mix until well combined.
  • Shape the mixture into small meatballs and place on a greased baking sheet.
  • Bake in the preheated oven for 20 minutes or until golden brown.
