Zucchini Lasagna Roll-Ups

Delicious zucchini lasagna roll-ups filled with ricotta and marinara sauce, perfect for a light and flavorful meal.

  • 2 cups ricotta cheese
  • 2 cups marinara sauce store-bought or homemade
  • 3 medium zucchini sliced lengthwise
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning

Instructions
 

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • Spread 1 cup of marinara sauce in the bottom of a baking dish.
  • Spread 2 tablespoons of ricotta cheese on each zucchini slice, sprinkle with Italian seasoning.
  • Roll up the zucchini slices and place them in the baking dish seam-side down.
  • Top the roll-ups with remaining marinara sauce and sprinkle mozzarella cheese on top.
  • Bake for 30-40 minutes until the cheese is bubbly and golden.

Notes

Use a mandoline slicer for evenly sliced zucchini.
