Instructions
Preparation Steps
Preheat the oven to 350°F (175°C). Grease a 12-cup muffin pan or line with paper liners.
In a large bowl, mix melted butter and sugar until well combined. Add eggs and vanilla extract, and mix well.
Stir in zucchini until fully incorporated.
In another bowl, whisk together flour and baking soda. Gradually add to zucchini mixture just until moistened.
Fold in chocolate chips.
Fill prepared muffin cups about 2/3 full with batter.
Bake in preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Notes
Store muffins in an airtight container at room temperature for up to 3 days, or freeze for later.
