Zucchini Chocolate Chip Muffins

Deliciously moist zucchini chocolate chip muffins that perfectly blend healthy ingredients with a touch of sweetness.

  • 1.5 cups shredded zucchini packed
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter melted
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease a 12-cup muffin pan or line with paper liners.
  • In a large bowl, mix melted butter and sugar until well combined. Add eggs and vanilla extract, and mix well.
  • Stir in zucchini until fully incorporated.
  • In another bowl, whisk together flour and baking soda. Gradually add to zucchini mixture just until moistened.
  • Fold in chocolate chips.
  • Fill prepared muffin cups about 2/3 full with batter.
  • Bake in preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Notes

Store muffins in an airtight container at room temperature for up to 3 days, or freeze for later.
