Zucchini Bread Streusel

This zucchini bread is topped with a delightful streusel that adds a perfect crunch to each bite. It's a wonderful choice for breakfast or a snack!

  • 2 cups grated zucchini fresh
  • 3 cups all-purpose flour
  • 1.5 cups sugar
  • 1 teaspoon baking soda
  • 1.5 teaspoons ground cinnamon
  • 0.5 cup vegetable oil
  • 3 large eggs beaten
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts optional

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease two 8x4 inch loaf pans.
  • In a large bowl, combine flour, sugar, baking soda, and cinnamon.
  • In another bowl, mix oil, eggs, and vanilla. Add zucchini and mix well.
  • Stir the wet ingredients into the dry ingredients just until moistened. Fold in walnuts if using.
  • Pour batter into prepared pans. Bake for 50 minutes or until a toothpick inserted comes out clean.
  • Cool in pans for 10 minutes before transferring to a wire rack to cool completely.

Notes

This bread can be stored in an airtight container at room temperature for up to 3 days.
