  • 1.5 cups shredded zucchini Use fresh zucchini for best results.
  • 1 cup mashed bananas Ripe bananas work best.
  • 0.5 cup unsweetened applesauce
  • 1.5 cups all-purpose flour Can substitute with whole wheat flour.
  • 0.5 cup brown sugar Adjust to taste.

Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a large bowl, mix together zucchini, bananas, and applesauce until well combined.
  • In a separate bowl, whisk together flour and brown sugar.
  • Gradually add the dry ingredients to the wet mixture and stir until just combined.
  • Pour the batter into the prepared baking dish and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Let the bars cool completely before cutting into squares. Store leftovers in an airtight container.
