Preparation Steps
In a large pot, combine vegetable broth, coconut milk, lemongrass, and galangal. Bring to a simmer.
Add mushrooms and cook until softened, about 5-7 minutes.
Stir in lime juice, soy sauce, and brown sugar. Season to taste.
Add shirataki noodles and cook until heated through, about 2-3 minutes.
Serve hot.
