Vegan Tom Kha Soup

A creamy, flavorful vegan take on the classic Tom Kha soup. This recipe uses coconut milk, lemongrass, galangal, and lime for an authentic taste.

  • 1 cup Vegetable broth
  • 1 can Full-fat coconut milk
  • 2 stalks Lemongrass Bruised
  • 1 piece Galangal Sliced
  • 1 tablespoon Lime juice
  • 1 teaspoon Soy sauce
  • 0.5 teaspoon Brown sugar
  • 8 ounces Mushrooms Sliced
  • 1 cup Shirataki noodles

Preparation Steps

  • In a large pot, combine vegetable broth, coconut milk, lemongrass, and galangal. Bring to a simmer.
  • Add mushrooms and cook until softened, about 5-7 minutes.
  • Stir in lime juice, soy sauce, and brown sugar. Season to taste.
  • Add shirataki noodles and cook until heated through, about 2-3 minutes.
  • Serve hot.

Notes

Garnish with fresh cilantro, lime wedges, and chili flakes for extra flavor.
