Preparation Steps
Pat the chicken dry with paper towels and season with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes.
Remove the chicken from the skillet and set aside.
Add the minced garlic and sun-dried tomatoes to the skillet and cook for 1 minute until fragrant.
Pour in the chicken broth and heavy cream, and bring to a simmer, scraping up any browned bits from the bottom of the pan.
Stir in the Italian seasoning and Parmesan cheese. Cook for 2-3 minutes until the sauce has thickened slightly.
Add the fresh spinach to the skillet and stir until wilted.
Return the cooked chicken to the skillet and stir to coat in the sauce. Cook for another 2-3 minutes until heated through.
Taste and adjust seasoning with salt and pepper if needed.
Serve hot, garnished with extra Parmesan if desired.
Notes
This Tuscan Chicken is delicious served with pasta, rice, or crusty bread to soak up the sauce.
