Tuscan Chicken Recipe

A creamy and flavorful Tuscan Chicken recipe that's perfect for a weeknight dinner!

  • 1.5 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tbsp olive oil
  • 0.5 cup heavy cream
  • 0.5 cup chicken broth
  • 0.25 cup grated Parmesan cheese
  • 1 clove garlic minced
  • 0.25 cup sun-dried tomatoes oil-packed, drained and chopped
  • 0.5 cup fresh spinach
  • 0.5 tsp dried Italian seasoning
  • salt to taste
  • black pepper to taste

Preparation Steps

  • Pat the chicken dry with paper towels and season with salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes.
  • Remove the chicken from the skillet and set aside.
  • Add the minced garlic and sun-dried tomatoes to the skillet and cook for 1 minute until fragrant.
  • Pour in the chicken broth and heavy cream, and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  • Stir in the Italian seasoning and Parmesan cheese. Cook for 2-3 minutes until the sauce has thickened slightly.
  • Add the fresh spinach to the skillet and stir until wilted.
  • Return the cooked chicken to the skillet and stir to coat in the sauce. Cook for another 2-3 minutes until heated through.
  • Taste and adjust seasoning with salt and pepper if needed.
  • Serve hot, garnished with extra Parmesan if desired.

Notes

This Tuscan Chicken is delicious served with pasta, rice, or crusty bread to soak up the sauce.
