Preparation Steps
Roast the eggplants over an open flame until the skin is charred and blistered. Let cool, then peel and chop.
In a bowl, whisk together the eggs and salt.
Add the chopped eggplants to the egg mixture.
Heat the cooking oil in a pan over medium heat. Pour in the eggplant mixture and cook until golden brown and set, about 5-7 minutes per side.
Serve hot with rice.
Notes
For a richer flavor, add a tablespoon of soy sauce to the egg mixture.
