Tortang Talong Recipe

A simple and delicious recipe for Tortang Talong, a Filipino eggplant omelet.

  • 2 large eggplants Choose firm, glossy eggplants.
  • 3 large eggs
  • 1 teaspoon salt
  • 1 tablespoon cooking oil

Preparation Steps

  • Roast the eggplants over an open flame until the skin is charred and blistered. Let cool, then peel and chop.
  • In a bowl, whisk together the eggs and salt.
  • Add the chopped eggplants to the egg mixture.
  • Heat the cooking oil in a pan over medium heat. Pour in the eggplant mixture and cook until golden brown and set, about 5-7 minutes per side.
  • Serve hot with rice.

Notes

For a richer flavor, add a tablespoon of soy sauce to the egg mixture.
