Rub the roast with olive oil, salt, and black pepper.

Press the minced garlic and fresh rosemary and thyme onto the roast.

Place the roast in a roasting pan.
Roast for approximately 20-25 minutes per pound for medium-rare (130-135°F/54-57°C), or longer for your desired doneness. Use a meat thermometer to check the internal temperature.
Once cooked, remove the roast from the oven and let it rest for at least 15-20 minutes before slicing.
Slice the roast beef against the grain and serve.
Notes
For a richer flavor, you can add a cup of beef broth to the bottom of the roasting pan. This recipe can also be made ahead and reheated gently.
