Tomato Zucchini Pasta

A light and summery pasta dish featuring fresh tomatoes and zucchini. Perfect for a quick weeknight meal.

  • 1 pound zucchini sliced into half-moons
  • 1 pound ripe tomatoes diced
  • 8 ounces pasta
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup grated Parmesan cheese

Preparation Steps

  • Cook pasta according to package directions.
  • While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant (about 30 seconds).
  • Add zucchini and tomatoes to the skillet. Cook until softened, about 5-7 minutes.
  • Drain pasta and add it to the skillet with the vegetables. Stir in salt and pepper.
  • Serve immediately, topped with Parmesan cheese.

Notes

For a richer flavor, add a splash of white wine to the skillet with the garlic.
