Tex-Mex Pasta Salad

A vibrant and flavorful Tex-Mex pasta salad perfect for potlucks or a light summer meal. This recipe combines rotini pasta with black beans, corn, bell peppers, and a zesty lime dressing.

  • 1 lb Rotini pasta
  • 1 can Black beans, rinsed and drained
  • 1 cup Frozen corn, thawed
  • 1 cup Chopped red bell pepper
  • 1 cup Chopped green onions
  • 0.5 cup Lime juice
  • 0.25 cup Olive oil
  • 1 tsp Chili powder
  • 0.5 tsp Cumin
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper

Preparation Steps

  • Cook pasta according to package directions. Drain and rinse with cold water.
  • In a large bowl, combine cooked pasta, black beans, corn, bell pepper, and green onions.
  • In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
  • Pour dressing over pasta mixture and toss to combine.
  • Chill for at least 30 minutes before serving.

Notes

For extra flavor, add a diced avocado or crumbled cotija cheese before serving.
