Instructions
Preparation Steps
Cook pasta according to package directions. Drain and rinse with cold water.
In a large bowl, combine cooked pasta, black beans, corn, bell pepper, and green onions.
In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
Pour dressing over pasta mixture and toss to combine.
Chill for at least 30 minutes before serving.
Notes
For extra flavor, add a diced avocado or crumbled cotija cheese before serving.
