Taco Soup Recipe

A hearty and flavorful taco soup that's quick to make and perfect for a weeknight meal. Packed with ground beef, beans, and classic taco seasonings.

  • 1 pound ground beef
  • 0.5 cup chopped onion
  • 0.5 cup chopped bell pepper
  • 2 cloves minced garlic
  • 1 can diced tomatoes undrained, 14.5 ounce
  • 1 can kidney beans rinsed and drained, 15 ounce
  • 1 can black beans rinsed and drained, 15 ounce
  • 1 can corn drained, 15 ounce
  • 1 packet taco seasoning mix
  • 1 can chicken broth 14.5 ounce

Preparation Steps

  • In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
  • Add the chopped onion and bell pepper to the pot and cook until softened, about 5-7 minutes.
  • Stir in the minced garlic and cook for 1 minute more until fragrant.
  • Add the diced tomatoes (undrained), kidney beans, black beans, corn, taco seasoning mix, and chicken broth to the pot.
  • Bring the soup to a boil, then reduce heat and simmer for at least 20 minutes to allow the flavors to meld.
  • Serve hot, garnished with your favorite taco toppings like shredded cheese, sour cream, or avocado.

Notes

This taco soup is easily customizable. Feel free to add other vegetables like jalapeños or green chilies for extra spice. It also freezes well!
