Instructions
Preparation Steps
Cook the macaroni according to package directions. Drain and set aside.
Brown the ground beef in a large skillet over medium heat. Drain off any excess fat.
Stir in the taco seasoning and cook for 1 minute more.
In a large bowl, combine the cooked macaroni, ground beef, black beans, corn, and cheddar cheese.
Add the sour cream and stir gently to combine.
Serve immediately or chill for later.
Notes
For a spicier salad, add a pinch of red pepper flakes. You can also add other vegetables, such as diced tomatoes or bell peppers.
