Taco Pasta Salad

A vibrant and flavorful Taco Pasta Salad, perfect for a summer lunch or potluck. This recipe combines cooked pasta, seasoned ground beef, black beans, corn, and a zesty taco dressing.

  • 1 lb Ground Beef 80/20 blend recommended
  • 1 cup Uncooked Elbow Macaroni
  • 1 can Black Beans drained and rinsed
  • 1 cup Frozen Corn thawed
  • 1 cup Shredded Cheddar Cheese
  • 0.5 cup Sour Cream
  • 0.25 cup Taco Seasoning

Preparation Steps

  • Cook pasta according to package directions. Drain and rinse with cold water.
  • Brown ground beef in a large skillet. Drain off excess grease.
  • Stir in taco seasoning and cook for 1 minute more.
  • Combine cooked pasta, ground beef, black beans, corn, and cheese in a large bowl.
  • In a small bowl, mix together sour cream and desired amount of taco seasoning. Pour over pasta mixture and stir to combine.
  • Chill for at least 30 minutes before serving.

Notes

For extra flavor, add diced tomatoes, onions, or jalapeños. You can also use different types of cheese or pasta.
