Instructions
Preparation Steps
Cook pasta according to package directions. Drain and rinse with cold water.
Brown ground beef in a large skillet. Drain off excess grease.
Stir in taco seasoning and cook for 1 minute more.
Combine cooked pasta, ground beef, black beans, corn, and cheese in a large bowl.
In a small bowl, mix together sour cream and desired amount of taco seasoning. Pour over pasta mixture and stir to combine.
Chill for at least 30 minutes before serving.
Notes
For extra flavor, add diced tomatoes, onions, or jalapeños. You can also use different types of cheese or pasta.
