Swiss Chicken Casserole

  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 cup chopped onion
  • 1 cup sliced mushrooms
  • 1 cup cooked rice
  • 1 can cream of mushroom soup
  • 1 cup shredded Swiss cheese
  • 1 tsp dried thyme

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook chicken until browned. Add onion and mushrooms; cook until softened.
  • Stir in cream of mushroom soup and thyme. Add cooked rice and mix well.
  • Pour mixture into a greased 9x13 inch baking dish. Top with Swiss cheese.
  • Bake for 25-30 minutes, or until heated through and bubbly.

Notes

Serve hot. Garnish with extra Swiss cheese if desired.
