  • 2 lbs sweet potatoes
  • 4 large eggs
  • 0.5 cup sugar
  • 0.5 tsp salt
  • 2 tbsp butter

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • Peel and boil sweet potatoes until tender. Mash well.
  • Beat eggs with sugar and salt until light and fluffy.
  • Gently fold mashed sweet potatoes into egg mixture.
  • Butter a baking dish and pour in the mixture.
  • Bake for 35 minutes, or until golden brown and set.

Notes

For a richer flavor, add a teaspoon of vanilla extract.
