Instructions
Preparation Steps
Preheat oven to 350°F (175°C).
Peel and boil sweet potatoes until tender. Mash well.
Beat eggs with sugar and salt until light and fluffy.
Gently fold mashed sweet potatoes into egg mixture.
Butter a baking dish and pour in the mixture.
Bake for 35 minutes, or until golden brown and set.
Notes
For a richer flavor, add a teaspoon of vanilla extract.
