Stuffed Pepper Soup Recipe

  • 1 lb Ground beef Can substitute with ground turkey or chicken
  • 1 cup Chopped onion
  • 2 cups Diced bell peppers (any color)
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 4 cups Beef broth
  • 1 can (14.5 oz) Diced tomatoes
  • 1 cup Cooked rice

Preparation Steps

  • Brown ground beef in a large pot over medium-high heat. Drain off any excess fat.
  • Add onion and bell peppers to the pot and cook until softened, about 5 minutes.
  • Stir in oregano, basil, beef broth, diced tomatoes, and rice. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Season with salt and pepper to taste. Serve hot.

Notes

This soup can be made ahead of time and reheated. Leftovers can be stored in the refrigerator for up to 3 days.
