Instructions
Preparation Steps
Brown ground beef in a large pot over medium-high heat. Drain off any excess fat.
Add onion and bell peppers to the pot and cook until softened, about 5 minutes.
Stir in oregano, basil, beef broth, diced tomatoes, and rice. Bring to a boil, then reduce heat and simmer for 20 minutes.
Season with salt and pepper to taste. Serve hot.
Notes
This soup can be made ahead of time and reheated. Leftovers can be stored in the refrigerator for up to 3 days.
