Stuffed Bell Peppers Recipe

A delicious and healthy recipe for stuffed bell peppers, perfect for a weeknight dinner.

  • 2 lbs Ground beef
  • 1 cup Uncooked rice
  • 4 large Bell peppers Assorted colors
  • 1 small Onion Chopped
  • 1 can (14.5 oz) Diced tomatoes

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Brown ground beef in a large skillet over medium-high heat. Drain excess fat.
  • Add onion and cook until softened, about 5 minutes.
  • Stir in rice, diced tomatoes, and salt and pepper to taste.
  • Cut bell peppers in half lengthwise and remove seeds and membranes.
  • Fill each pepper half with the beef and rice mixture.
  • Place stuffed peppers in a baking dish and bake for 40 minutes, or until peppers are tender and filling is heated through.

Notes

Serve hot. Garnish with fresh herbs if desired.
