  • 3 cups fresh rhubarb, chopped
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 0.5 cup granulated sugar
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup milk
  • 0.5 cup melted butter

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine rhubarb, strawberries, 1 cup sugar, cornstarch, and cinnamon.
  • Pour mixture into a greased 8x8 inch baking dish.
  • In a separate bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt.
  • Stir in milk and melted butter until just combined.
  • Pour batter over the fruit mixture.
  • Bake for 40-45 minutes, or until golden brown and bubbly.
  • Let cool slightly before serving.

Notes

Serve warm with a scoop of vanilla ice cream or whipped cream.
