Strawberry Hand Pies

These delightful strawberry hand pies are perfect for a summer treat. Flaky pastry crust encases a sweet and juicy strawberry filling.

  • 1 cups all-purpose flour
  • 0.5 cups cold unsalted butter cubed
  • 0.25 cups cold vegetable shortening
  • 0.5 teaspoon salt
  • 0.25 cups ice water
  • 16 ounces fresh strawberries hulled and sliced
  • 0.5 cups granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice

Preparation Steps

  • Make the pie crust: Whisk together flour and salt. Cut in butter and shortening until mixture resembles coarse crumbs. Gradually add ice water, mixing until dough just comes together.
  • Chill the dough for at least 30 minutes.
  • Make the filling: Combine strawberries, sugar, cornstarch, and lemon juice in a bowl.
  • Roll out the dough and cut out circles. Fill each circle with strawberry filling and fold over to form a half-moon shape. Crimp the edges to seal.
  • Bake at 375°F (190°C) for 20-25 minutes, or until golden brown.

Notes

Serve warm with a scoop of vanilla ice cream or whipped cream.
