Strawberry Cupcakes

Delicious and moist strawberry cupcakes perfect for any occasion.

  • 1.5 cups all-purpose flour
  • 1 cup sugar
  • 0.5 cup butter softened
  • 2 eggs
  • 1 cup fresh strawberries pureed
  • 2 tsp baking powder
  • 0.5 tsp salt

Preparation Steps

  • Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a bowl, mix flour, baking powder, and salt.
  • In another bowl, cream the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well with each addition.
  • Mix in the strawberry puree.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fill the cupcake liners 2/3 full with batter.
  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

Notes

For a touch of elegance, top with whipped cream and a fresh strawberry.
