Instructions
Preparation Steps
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with cooking spray and set aside.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, combine the sugar and lemon zest, then rub them together with your fingers until the sugar is moist and fragrant.
Add the eggs and beat with an electric mixer on high speed until the mixture is thick and light in color.
Mix in the sour cream, lemon juice, then gradually add the flour mixture, mixing just until blended.
Fold in the melted butter until well combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
Notes
Serve with a glaze made of powdered sugar and lemon juice for extra zing.
