  • 1.5 cups all-purpose flour sifted
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 3 large eggs room temperature
  • 0.5 cup sour cream
  • 2 tbsp fresh lemon juice from about 1 lemon
  • 1 tbsp lemon zest from about 2 lemons
  • 0.5 cup unsalted butter melted and cooled

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with cooking spray and set aside.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, combine the sugar and lemon zest, then rub them together with your fingers until the sugar is moist and fragrant.
  • Add the eggs and beat with an electric mixer on high speed until the mixture is thick and light in color.
  • Mix in the sour cream, lemon juice, then gradually add the flour mixture, mixing just until blended.
  • Fold in the melted butter until well combined.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.

Notes

Serve with a glaze made of powdered sugar and lemon juice for extra zing.
