Preparation Steps
In a large bowl, whisk together the cornmeal, flour, baking powder, and salt.
In a separate bowl, whisk together the milk, egg, and vegetable oil.
Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
Heat a lightly oiled griddle or frying pan over medium heat.
Drop spoonfuls of the batter onto the hot griddle, flattening slightly.
Cook for 2-3 minutes per side, or until golden brown and cooked through.
Serve immediately with butter and your favorite toppings.
Notes
