Smothered Baked Chicken Burritos

Juicy chicken smothered in a rich sauce, all baked to perfection in flour tortillas. A simple, satisfying, and flavorful meal!

  • 1.5 lbs Boneless, skinless chicken breasts Cut into 1-inch cubes
  • 1 cup Enchilada sauce
  • 1 cup Chicken broth
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 12 oz Burrito size flour tortillas
  • 1 cup Shredded cheddar cheese

Instructions
 

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine chicken, enchilada sauce, chicken broth, cumin, and chili powder. Mix well.
  • Spread chicken mixture evenly among tortillas. Roll tightly and place seam down in a greased 9x13 inch baking dish.
  • Bake for 30-35 minutes, or until chicken is cooked through and cheese is melted and bubbly.
  • Serve immediately.

Notes

For extra flavor, add a sprinkle of green onions or cilantro before serving.
