Slow Cooker Chicken Thighs

Tender, juicy chicken thighs cooked to perfection in the slow cooker with minimal effort. This recipe is perfect for a weeknight meal.

  • 2.5 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.25 teaspoon onion powder

Preparation Steps

  • Pat the chicken thighs dry with paper towels.
  • In a small bowl, combine salt, pepper, garlic powder, paprika, and onion powder. Rub the spice mixture all over the chicken thighs.
  • Heat olive oil in a skillet over medium-high heat. Sear the chicken thighs for 2-3 minutes per side until golden brown.
  • Place the seared chicken thighs in your slow cooker.
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  • Serve hot with your favorite sides.

Notes

Feel free to add vegetables like potatoes or carrots to the slow cooker along with the chicken for a complete meal.
