Slow Cooker Chicken Enchilada Soup

This Slow Cooker Chicken Enchilada Soup is a hearty and flavorful meal that's perfect for any evening.

  • 1.5 lbs boneless skinless chicken breasts
  • 2 cups chicken broth
  • 1 can black beans, drained and rinsed 15 oz
  • 2 cups enchilada sauce
  • 1 can diced tomatoes 14 oz
  • 1 tbsp chili powder
  • 1 tsp cumin

Instructions
 

Preparation Steps

  • Place chicken breasts at the bottom of the slow cooker.
  • Add the chicken broth, black beans, enchilada sauce, diced tomatoes, chili powder, and cumin.
  • Cover and cook on low for 6-8 hours, or until chicken is cooked through.
  • Remove chicken breasts and shred with two forks, then return to the slow cooker and mix well.

Notes

Garnish with shredded cheese, sour cream, or avocado if desired.
