Preparation Steps
In a large pot or Dutch oven, brown the chicken pieces over medium-high heat. Remove chicken and set aside.
Add carrots, celery, and onion to the pot and cook until softened, about 5 minutes.
Return chicken to the pot. Add chicken broth, oregano, basil, salt, pepper, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until chicken is cooked through.
Serve hot.
Notes
For a richer flavor, use homemade chicken broth. You can also add other vegetables like potatoes or zucchini.
