  • 1.5 lbs Chicken pieces Bone-in, skin-on chicken thighs and drumsticks recommended
  • 1 cup Chopped carrots
  • 1 cup Chopped celery
  • 1 cup Chopped onion
  • 8 cups Chicken broth
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.5 cup Diced tomatoes

Preparation Steps

  • In a large pot or Dutch oven, brown the chicken pieces over medium-high heat. Remove chicken and set aside.
  • Add carrots, celery, and onion to the pot and cook until softened, about 5 minutes.
  • Return chicken to the pot. Add chicken broth, oregano, basil, salt, pepper, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until chicken is cooked through.
  • Serve hot.

Notes

For a richer flavor, use homemade chicken broth. You can also add other vegetables like potatoes or zucchini.
