seafood pasta salad

A flavorful and refreshing seafood pasta salad, perfect for picnics, potlucks, or a light summer meal.

Ingredients
  

Pasta and Seafood

  • 0.5 pound Rotini pasta
  • 0.25 pound Cooked small shrimp, peeled and deveined
  • 0.25 pound Cooked crab meat, flaked
  • 0.125 pound Cooked imitation crab meat, chopped

Vegetables

  • 0.5 cup Celery, finely chopped
  • 0.5 cup Red bell pepper, finely chopped
  • 0.25 cup Red onion, finely chopped

Dressing

  • 0.5 cup Mayonnaise
  • 2 tablespoon Fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Garnish

  • 2 tablespoon Fresh parsley, chopped

Preparation Steps

  • Cook pasta according to package directions until al dente. Drain and rinse with cold water.
  • In a large bowl, combine the cooked pasta, shrimp, crab meat, imitation crab meat, celery, red bell pepper, and red onion.
  • In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, and pepper until well combined.
  • Pour the dressing over the pasta and seafood mixture. Gently toss to coat evenly.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Garnish with fresh parsley before serving.

Notes

For a spicier kick, add a pinch of red pepper flakes to the dressing. You can also add other vegetables like corn or peas.
