A delicious and easy rhubarb crisp recipe, perfect for a summer dessert. Sweet and tart rhubarb is topped with a buttery oat crumble.

  • 4 cups chopped rhubarb Use fresh rhubarb, if possible
  • 3 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1 cup butter, cold and cut into cubes

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine rhubarb, granulated sugar, cornstarch, and cinnamon.
  • Pour mixture into a baking dish.
  • In a separate bowl, combine oats, flour, brown sugar, and cold butter. Use your fingers or a pastry blender to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Sprinkle the crumble topping evenly over the rhubarb mixture.
  • Bake for 35-40 minutes, or until the topping is golden brown and the rhubarb is tender.
  • Let cool slightly before serving.

Notes

Serve warm with a scoop of vanilla ice cream or whipped cream.
