Red Velvet Cupcakes

Delicious and moist red velvet cupcakes with cream cheese frosting, perfect for any occasion.

  • 1.5 cups all-purpose flour sifted
  • 1 cup sugar
  • 0.5 cup butter softened
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 2 eggs large
  • 1 cup buttermilk
  • 1.5 teaspoons baking soda
  • 1 teaspoon vinegar

Preparation Steps

  • Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  • In a bowl, cream together the butter and sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition.
  • Mix in vanilla extract and red food coloring.
  • In another bowl, sift together flour and cocoa powder.
  • Gradually add dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with dry ingredients.
  • In a small cup, combine baking soda and vinegar and quickly add to the batter.
  • Spoon batter into prepared cupcake liners, filling each about two-thirds full.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

For extra flair, top the cooled cupcakes with your favorite cream cheese frosting.
