Preparation Steps
Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
In a bowl, cream together the butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition.
Mix in vanilla extract and red food coloring.
In another bowl, sift together flour and cocoa powder.
Gradually add dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with dry ingredients.
In a small cup, combine baking soda and vinegar and quickly add to the batter.
Spoon batter into prepared cupcake liners, filling each about two-thirds full.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
For extra flair, top the cooled cupcakes with your favorite cream cheese frosting.
