Raspberry Crumb Bars

These Raspberry Crumb Bars are a delightful treat, perfect for any occasion. The buttery crumb topping contrasts beautifully with the sweet and tart raspberry filling.

Ingredients
  

Crust Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups rolled oats
  • 0.5 teaspoon salt
  • 0.66 cups brown sugar packed
  • 1 cup cold unsalted butter cut into cubes

Raspberry Filling

  • 3 cups fresh raspberries
  • 0.5 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, combine flour, oats, salt, and brown sugar. Cut in cold butter until mixture resembles coarse crumbs.
  • Press half of the crumb mixture into the prepared pan.
  • In a separate bowl, combine raspberries, sugar, cornstarch, and lemon juice. Pour over the crust.
  • Crumble the remaining crumb mixture evenly over the raspberry filling.
  • Bake for 30-35 minutes, or until golden brown and the filling is bubbly.
  • Let cool completely before cutting into bars.

Store leftover bars in an airtight container at room temperature for up to 3 days.
