Instructions
Preparation Steps
Preheat oven to 350°F (175°C).
Combine crushed gingersnaps and melted butter; press into the bottom of a baking pan.
Beat cream cheese, pumpkin puree, sugar, eggs, vanilla, and pumpkin pie spice until smooth.
Pour filling over crust.
Bake for 30-35 minutes, or until set.
Cool completely before cutting into bars.

Store leftover bars in the refrigerator for up to 3 days.
