A delicious copycat recipe for Popeyes' famous Red Beans and Rice. This recipe captures the savory and slightly spicy flavors of the original.

  • 1 cup dried red kidney beans soaked overnight
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper or to taste
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 cup cooked rice
  • 2 tablespoons chopped green onions for garnish

Preparation Steps

  • Sauté onion and garlic in olive oil until softened.
  • Add spices and cook for 1 minute.
  • Stir in beans, broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 40-45 minutes, or until beans are tender.
  • Remove bay leaf. Serve over rice and garnish with green onions.

Notes

For a spicier dish, add more cayenne pepper. Leftovers can be stored in the refrigerator for up to 3 days.
