Instructions
Preparation Steps
Sauté onion and garlic in olive oil until softened.
Add spices and cook for 1 minute.
Stir in beans, broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 40-45 minutes, or until beans are tender.
Remove bay leaf. Serve over rice and garnish with green onions.
Notes
For a spicier dish, add more cayenne pepper. Leftovers can be stored in the refrigerator for up to 3 days.
