Philly Cheese Steak Quesadillas

A delicious twist on the classic Philly cheesesteak, these quesadillas are quick, easy, and perfect for a weeknight meal.

  • 8 oz thinly sliced steak Ribeye or sirloin work well
  • 1 cup shredded cheddar cheese
  • 1 cup thinly sliced onions
  • 1 tbsp olive oil
  • 2 large flour tortillas
  • 1 tsp salt
  • 1 tsp black pepper

Preparation Steps

  • Heat olive oil in a skillet over medium-high heat. Add steak and onions; cook until steak is browned and onions are softened, about 5-7 minutes.
  • Season with salt and pepper.
  • Place one tortilla in the skillet. Sprinkle half of the cheese and steak mixture over the tortilla.
  • Top with the other tortilla. Cook for 2-3 minutes per side, or until golden brown and cheese is melted.
  • Cut into wedges and serve immediately.

Notes

These quesadillas are even better with a side of your favorite dipping sauce, like sour cream or guacamole.
