Peaches Cream Cheesecake Bars

These decadent Peach Cream Cheesecake Bars are the perfect summer treat! A creamy cheesecake filling sits atop a buttery graham cracker crust and is topped with fresh peaches.

Ingredients
  

Crust Ingredients

  • 1.5 cups graham cracker crumbs
  • 0.5 cup sugar
  • 0.25 cup melted butter

Filling Ingredients

  • 16 ounces cream cheese softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups sliced peaches

Preparation Steps

  • Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a greased 9x13 inch baking pan.
  • Beat cream cheese and sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract. Spread over the crust.
  • Arrange peach slices over the cheesecake filling. Bake for 35-40 minutes, or until set.
  • Let cool completely before cutting into bars.

Store leftover bars in the refrigerator for up to 3 days.
