  • 1.5 lbs Boneless, skinless chicken breasts Cut into 1-inch pieces
  • 4 cups Chicken broth
  • 1 cup Water
  • 1 cup Sliced carrots
  • 1 cup Sliced celery
  • 0.5 cup Sliced mushrooms

Preparation Steps

  • In a large pot or Dutch oven, combine chicken broth, water, carrots, celery, and mushrooms.
  • Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Add chicken and simmer until cooked through, about 10-15 minutes.
  • Season with salt and pepper to taste.

Notes

Garnish with fresh cilantro and lime wedges before serving. For a spicier soup, add a pinch of red pepper flakes.
