Oven Quesadillas

Crispy oven-baked quesadillas, a simple and delicious weeknight meal. Perfect for using up leftover ingredients!

  • 1 cup shredded cheddar cheese Use your favorite blend of cheeses
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas
  • 1 teaspoon olive oil
  • 0.5 cup diced cooked chicken Optional

Instructions
 

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Lightly brush a baking sheet with olive oil.
  • Spread half of the cheese on one half of each tortilla. Add cooked chicken (if using). Fold the other half of the tortilla over the filling.
  • Place the quesadillas on the prepared baking sheet and bake for 12-15 minutes, or until golden brown and the cheese is melted and bubbly.
  • Cut into wedges and serve immediately.

Notes

These quesadillas are great for meal prepping. Store leftovers in an airtight container in the refrigerator for up to 3 days.
