One-Pot Lasagna Soup

A hearty and flavorful one-pot lasagna soup, perfect for a cozy weeknight meal. This recipe combines the best of lasagna and soup into one easy-to-make dish.

  • 1 lb Ground beef
  • 1 cup Chopped onion
  • 2 cloves Garlic, minced
  • 28 oz Crushed tomatoes
  • 15 oz Cannellini beans, rinsed and drained
  • 0.5 cup Uncooked lasagna noodles, broken into pieces
  • 2 cups Vegetable broth
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 cup Shredded mozzarella cheese

Preparation Steps

  • Brown ground beef in a large pot or Dutch oven over medium-high heat. Drain off any excess grease.
  • Add onion and garlic; cook until softened, about 5 minutes.
  • Stir in crushed tomatoes, cannellini beans, lasagna noodles, vegetable broth, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until noodles are tender.
  • Stir in mozzarella cheese and serve immediately.

Notes

For a spicier soup, add a pinch of red pepper flakes. You can also add other vegetables, such as carrots or zucchini.
