Oatmeal Scotchie Bars

Deliciously chewy oatmeal bars with butterscotch chips and a hint of vanilla.

  • 1.5 cups all-purpose flour
  • 3 cups old-fashioned oats
  • 1 cup butterscotch chips can substitute with chocolate chips
  • 1 cup unsalted butter melted
  • 1 cup brown sugar packed
  • 2 tsp vanilla extract

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a large bowl, mix together melted butter and brown sugar until smooth.
  • Stir in vanilla extract and then add flour and oats. Mix until well combined.
  • Fold in butterscotch chips.
  • Spread the mixture evenly in the prepared baking dish.
  • Bake for 25 minutes or until edges are golden brown. Allow to cool before cutting into bars.

Notes

Store bars in an airtight container for up to a week.
