Oatmeal Chocolate Chip Bars

These chewy and delicious oatmeal chocolate chip bars are the perfect make-ahead treat! Packed with oats and chocolate chips, they're sure to become a family favorite.

  • 0.75 cup unsalted butter softened
  • 0.75 cup packed brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cup all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 3 cup rolled oats old-fashioned
  • 1.5 cup semi-sweet chocolate chips

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate medium bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the rolled oats and chocolate chips until evenly distributed.
  • Press the dough evenly into the prepared baking pan.
  • Bake for 20-25 minutes, or until the edges are golden brown and the center is set.
  • Let cool in the pan for at least 30 minutes before cutting into bars.

Notes

For an extra chewy bar, don't overbake. You can also add a sprinkle of sea salt on top before baking for a sweet and salty contrast.
