Crush the digestive biscuits into fine crumbs. Mix with melted butter and press into the bottom of a 9-inch springform pan. Chill in the refrigerator.
Soak gelatin leaves in cold water until softened. If using gelatin powder, sprinkle over cold water and let it bloom.
Heat the bloomed gelatin until dissolved. Set aside to cool slightly.
Whip heavy cream until stiff peaks form. In a separate bowl, combine quark cheese, sugar, and vanilla extract. Mix until smooth.
Gently fold whipped cream into the quark mixture. Gradually pour the cooled gelatin into the quark mixture while mixing. Fold in half of the sliced strawberries.
Pour the filling over the chilled crust. Arrange the remaining strawberries on top. Heat strawberry jam until melted and brush over the strawberries as a glaze.
Cover and refrigerate for at least 4 hours or overnight to set.
Remove from the springform pan, slice, and serve chilled.
