Mud Hen Bars
A classic treat of layers combining a soft base with a gooey, marshmallow-like top.

Instructions
Preparation Steps
Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking pan.
In a medium bowl, cream butter and sugar until light and fluffy. Add flour and egg yolks, and mix well.
Spread mixture into the prepared baking pan, and bake for 20 minutes.
Remove from oven and sprinkle chocolate chips and marshmallows over the top.
Beat egg whites until stiff peaks form. Spread egg whites on top of marshmallows.
Return to oven and bake for another 10-15 minutes or until the top is golden brown.
Notes
These bars are best served warm but keep well in an airtight container for several days.
