Mud Hen Bars

Mud Hen Bars

A classic treat of layers combining a soft base with a gooey, marshmallow-like top.

Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup brown sugar packed
  • 0.5 cup butter softened
  • 3 eggs divided
  • 1 cup chocolate chips
  • 1 cup marshmallows miniature

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking pan.
  • In a medium bowl, cream butter and sugar until light and fluffy. Add flour and egg yolks, and mix well.
  • Spread mixture into the prepared baking pan, and bake for 20 minutes.
  • Remove from oven and sprinkle chocolate chips and marshmallows over the top.
  • Beat egg whites until stiff peaks form. Spread egg whites on top of marshmallows.
  • Return to oven and bake for another 10-15 minutes or until the top is golden brown.

Notes

These bars are best served warm but keep well in an airtight container for several days.
