  • 1 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg

Preparation Steps

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together flours, baking soda, baking powder, cinnamon, and nutmeg.
  • In a separate bowl, combine the remaining ingredients.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Fill muffin cups about 2/3 full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Store leftover muffins in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
