  • 1.5 lbs Boneless, skinless chicken breasts Cut into 1-inch thick slices
  • 1 cup Monterey Jack cheese, shredded
  • 0.5 cup Pico de Gallo
  • 2 tbsp Olive oil
  • 1 tsp Chili powder
  • 0.5 tsp Cumin

Preparation Steps

  • Marinate chicken in olive oil, chili powder, and cumin for at least 30 minutes.
  • Preheat grill to medium-high heat.
  • Grill chicken for 5-7 minutes per side, or until cooked through.
  • Top with shredded Monterey Jack cheese and pico de gallo during the last minute of grilling.
