Mint Chocolate Chip Truffles

  • 1.5 cups heavy cream
  • 2 cups mint chocolate chips or regular chocolate chips with mint extract
  • 1 tbsp butter softened
  • 0.5 tsp vanilla extract

Preparation Steps

  • In a saucepan, heat the heavy cream over medium heat until it begins to simmer.
  • Remove the cream from heat and add the mint chocolate chips. Stir until smooth.
  • Stir in the butter and vanilla extract until well combined.
  • Chill the mixture in the refrigerator until it is firm enough to scoop, about 2 hours.
  • Scoop small amounts of the mixture and roll into balls. Refrigerate until ready to serve.

Notes

These truffles can be made ahead and stored in the refrigerator for up to a week.
