Instructions
Preparation Steps
In a saucepan, heat the heavy cream over medium heat until it begins to simmer.
Remove the cream from heat and add the mint chocolate chips. Stir until smooth.
Stir in the butter and vanilla extract until well combined.
Chill the mixture in the refrigerator until it is firm enough to scoop, about 2 hours.
Scoop small amounts of the mixture and roll into balls. Refrigerate until ready to serve.
Notes
These truffles can be made ahead and stored in the refrigerator for up to a week.
