Mini Raspberry Almond Tarts

These mini raspberry almond tarts are the perfect bite-sized dessert. Sweet raspberries and crunchy almonds combine in a buttery, flaky crust.

  • 1 cup all-purpose flour
  • 0.5 cup almond flour
  • 0.5 teaspoon salt
  • 0.5 cup cold unsalted butter cubed
  • 0.25 cup powdered sugar
  • 1 cup raspberry jam
  • 0.25 cup sliced almonds for topping

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • Combine flours and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs.
  • Stir in powdered sugar. Press into mini tart pans.
  • Bake for 15-20 minutes, or until golden brown.
  • Let cool completely. Fill with raspberry jam and top with sliced almonds.

Notes

Store tarts in an airtight container at room temperature for up to 3 days.
