Mini Pecan Pies

These mini pecan pies are the perfect individual-sized dessert for any occasion. They're rich, buttery, and packed with pecans.

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 tsp vanilla extract
  • 1 cup pecans chopped
  • 1 cup unsalted butter, melted
  • 1 package refrigerated pie crusts

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a medium bowl, combine sugar, corn syrup, and vanilla extract. Stir in pecans and melted butter.
  • Unroll pie crusts and cut out circles using a 4-inch cookie cutter. Place into mini muffin tins.
  • Fill each crust with pecan mixture.
  • Bake for 20-25 minutes, or until golden brown.
  • Let cool completely before serving.

Notes

These mini pies are best served at room temperature. Store leftovers in an airtight container in the refrigerator for up to 3 days.
