Mexican Tortilla Casserole Recipe

A cheesy, flavorful Mexican Tortilla Casserole perfect for a weeknight dinner. Layers of tortillas, seasoned ground beef, beans, cheese, and enchilada sauce create a hearty and satisfying meal.

  • 1 lb Ground Beef 80/20 blend recommended
  • 1 cup Chopped Onion
  • 1 cup Diced Green Bell Pepper
  • 1 can (15 oz) Refried Beans
  • 2 cups Shredded Cheddar Cheese
  • 1 cup Enchilada Sauce
  • 6 count Corn Tortillas

Instructions
 

Preparation Steps

  • Preheat oven to 350°F (175°C). Brown ground beef in a large skillet. Drain excess fat.
  • Add onion and bell pepper to the skillet and cook until softened.
  • In a 9x13 inch baking dish, spread a thin layer of enchilada sauce.
  • Layer half of the tortillas, then half of the beef mixture, half of the beans, and half of the cheese.
  • Repeat layers with remaining tortillas, beef mixture, beans, and cheese.
  • Pour remaining enchilada sauce over the top.
  • Bake for 30 minutes, or until heated through and bubbly.

Notes

Garnish with sour cream, avocado, and cilantro before serving.
