Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Brown ground beef in a large skillet. Drain excess fat.
Add onion and bell pepper to the skillet and cook until softened.
In a 9x13 inch baking dish, spread a thin layer of enchilada sauce.
Layer half of the tortillas, then half of the beef mixture, half of the beans, and half of the cheese.
Repeat layers with remaining tortillas, beef mixture, beans, and cheese.
Pour remaining enchilada sauce over the top.
Bake for 30 minutes, or until heated through and bubbly.
Notes
Garnish with sour cream, avocado, and cilantro before serving.
